About the Recipe
Bowls are my absolute favorite vegan go to! You can legit throw anything into a bowl and have a quick meal. I love to switch up my bowls by adding different toppings. You can also just mix it all together instead of layering and call it a stir fry! The options are truly endless. Enjoy and let me know what you do with your bowls.
Cook Time:
20 Minutes

Ingredients
Veggies:
Zucchini (1/4 c)
Yellow Squash (1/4 c)
Tri-color peppers (1/4 c)
 Red Onions (1/4 c)
Kale  (1 c)Â
Riced Cauliflower (1 c)
Toppings:Â
Sesame SeedsÂ
Sauces (Tahini, Teriyaki, etc.)Â
Spices: (season to taste)
Onion Powder (1 tbsp)Garlic Powder (1 tbsp)
Sea Salt (1 tbsp)
Black Pepper (1/2 tbsp)
Indian Curry (1 tbsp) (optional)
Turmeric (1 tbsp) (optional)
Minced Garlic (1 tsp)
Don't Forget:
Grapeseed Oil 1( tbsp - or any type of oil you have)
Preparation
Step 1
add medium heat to your pan
Step 2
add Grapeseed oil
Step 3
add diced tri-color peppers and red onions with a dash of sea salt, black pepper, onion powder and garlic power to your pan
Step 4
sautee your veggies for 3-5 minutes
Step 5
add add other veggies and allow them to sautee for 3-5 min (if you plan to use sweet potatoes, you may want to either purchase the frozen steamable pack and pop those in the microwave or put them in the air fryer to roast them nicely while you prepare everything else)
Step 6
while your veggies cook: Cook your cauliflower rice (I have no shame in buying frozen steamable packs) and being your beans to a boil
Step 7
Once your cauliflower rices is done it's time to build your bowlix
Step 8
add cauliflower rice to the bottom of the bowl
Step 9
add veggies and beans on top of the riced cauliflower
Step 10
stir your hashbrowns and add sea salt and pepper to your liking while they cook for 1-2 more minutes
Step 11
add sauces or seeds (optional)
Step 12
Serve in your favorite bowl with you favorite toppings. (Feel free to only use the veggies or beans that you love. Anything goes when it comes to building your own bowls!)
