About the Recipe
i love a good bowl! i was inspired by the sweet potato hash on the Busboys & Poets menu to create my own version of a hash bowl complete with kale, shredded root veggies, and a spicy addition of meatless chorizo. give this one a try and let me know how you like it!

Ingredients
Veggies:
Peppers (1/2 c)
Onions (1/2 c)
Toppings:Â
Meatless Chorizo or Sausage (2 -4 pieces) (choose any brand you like)Â
Spices: (season to taste)
Black Pepper
Garlic PowderÂ
Onion Powder
Sea SaltÂ
Don't Forget:
Grapeseed Oil 1( tbsp - or any type of oil you have)
Root veggie hash (1pk)
Preparation
Step 1
add 1 tbsp. grapeseed oil, onion and peppers to a pan on medium/low heat for 2-3 min
Step 2
while the veggies are browning, destalk and clean your kale
Step 3
add pepper, sea salt, onion and garlic powder to your peppers and onions then mix
Step 4
while your veggies finish browning for another minute, cut your chorizo sausage links into quarter sized pieces
Step 5
add your kale to the pan with peppers and onions and allow it to simmer on low heat
Step 6
add your frozen root veggie hashbrowns to a medium pan with 1 tbsp of grapeseed oil and allow it to cook for 3-4 min
Step 7
add more grapeseed oil and additional seasoning (i love to add some red pepper flakes to mine) to your liking to the kale, peppers, and onions then mix
Step 8
it's time to add your chorizo to a small pan on medium/low heat with 1 tsp of grapeseed oil so it doesn't stick to the pan
Step 9
your kale and peppers should be done so turn off the heat and allow them to simmer while your chorizo cooks
Step 10
stir your hashbrowns and add sea salt and pepper to your liking while they cook for 1-2 more minutes
Step 11
turn your chorizo over so it has time to brown on both sizes
Step 12
ok, you're ready to build your bowl: add 1 cup of root veggie hashbrowns to your bowl; add 1 cup of sauteed kale to your bowl as the next layer, and finally, add your chorizo sausage on top
Step 13
add some parsley or italian seasoning on top for a perfect meatless meal.
